Can I convert this bike into a "mullet" bike and put a 27.5" wheel on rear of the LTe?

Yes. We designed a flip chip on the seat stay to allow for either a 29" or 27.5" rear wheel. This flip chip provides consistent geometry in both wheel positions. See the owner's manual for further instructions.
